White is a baitfish, plain and simple. Most of what you're casting at spends the back half of the year eating young-of-year minnows, and a two-inch white grub is that fish — right size, right color, moving the right way. When they're feeding on bait rather than picking at the bottom, this is the one that gets eaten.
The tail is what makes a grub worth owning. It kicks on its own at any speed, so it works on a fast retrieve, a slow drag, and a dead fall alike. You cannot fish it too slowly. That matters when fish are cold or pressured and won't chase — you can hold it in front of them and it never stops moving.
There's a second reason to run white: you can see it. In clear water you can watch it swim and watch it vanish, and a bite you see is a bite you set on.
